Crockpot Chicken Recipes That Are Easy to Make

Crockpot Chicken Recipes are great for a cold night (or frankly, any night!). Here are 10 awesome recipes that I’ve found from around the internet that you can use to make a delicious, protein packed dinner for the whole family.

You can find all of the ingredients for these at places like your local Aldi store, Publix, and many other neighborhood places.

Crockpot Chicken Recipes #1: Slow Cooker Honey Lemon Chicken

Ashley Fehr over at The Recipe Rebel has an awesome recipe for lemon chicken in the slow cooker. It takes about 10 minutes to prep and 4 hours to cook.

Ingredients:

  • 1-pound boneless, skinless chicken breasts (about 3)
  • 3 tablespoons corn starch
  • 2 tablespoons canola oil

For the Honey Lemon Sauce in the first of the crockpot chicken recipes

  • ½ cup liquid honey
  • ⅓ cup low sodium chicken broth
  • ¼ cup fresh squeezed lemon juice (about 1 lemon – zest before juicing!)
  • 1 tablespoon low sodium soy sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons corn starch
  • zest of 1 lemon (optional)

Recipe #2: Tikka Masala

Taste of Home has an awesome crockpot chicken recipe for tikka masala. Here’s the ingredients you’ll need for that:

  • 1 can (29 ounces) tomato puree
  • 1-1/2 cups plain yogurt
  • 1/2 large onion, finely chopped
  • 2 tablespoons olive oil
  • 4-1/2 teaspoons minced fresh gingerroot
  • 4 garlic cloves, minced
  • 1 tablespoon garam masala
  • 2-1/2 teaspoons salt
  • 1-1/2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 3/4 teaspoon pepper
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 2-1/2 pounds boneless skinless chicken breasts, cut into 1-1/2-inch cubes
  • 1 jalapeno pepper, halved and seeded
  • Single bay leaf
  • 1 tablespoon cornstarch
  • 1 cup heavy whipping cream
  • Hot cooked basmati rice
  • Chopped fresh cilantro, optional

Recipe #3: Slow Cooker Mississippi Chicken

This one just sounds good. A recipe from The Magical Slow Cooker, this one will add some extra tang to your chicken night.

  • 2 lbs. boneless skinless chicken thighs (trim and discard large pieces of fat)
  • 1 oz. packet Hidden Valley Ranch dressing mix
  • 16 oz. deli-sliced pepperoncini peppers Whole pepperoncinis can be used or the mini spicy ones.
  • 1/2 cup pepperoncini pepper juice or chicken broth

You basically just need to throw all the ingredients for #3 of the crockpot chicken recipes into a crockpot and let it cook on low for 7-8 hours.

Recipe #4: Crockpot Chicken Breast Recipe

Becky Hardin at the Cookie Rookie has this awesome recipe to make some chicken breast in the crockpot. The best part? It’s really simple. Here’s what you need to make it:

  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • Half teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 4 large chicken breasts

You’ll pretty much be putting the chicken + broth into your slow cooker, mixing all the spices, and adding those in there with it. Cook on low for 4-5 hours.

#5 Crock-Pot Chicken and Broccoli

Isabel Smith, a registered dietitian and writer for Delish has an awesome recipe for the fifth of these crockpot chicken recipes. Combining it with broccoli is usually a winning combination.

Ingredients

2 cloves garlic, minced

1 tsp. ginger, minced

1/4 c. low-sodium soy sauce (or coconut aminos)

1/4 c. honey

2 tbsp. rice wine vinegar 

1 tbsp. ketchup

1 tbsp. Sriracha

1 tsp. sesame oil for this crockpot chicken recipe

2 lb. boneless skinless chicken breasts (about 4)

Kosher salt

Freshly ground black pepper 1 tbsp

cornstarch 1 

large head broccoli, cut into florets

Cooked brown rice, for serving

#6 Easy Slow Cooker Chicken Chili

The Spruce Eats has a really good-looking chicken chili recipe that you can make. Here’s the ingredients for that:

  • 2 pounds boneless, skinless chicken breasts (about 4 large chicken breast halves)
  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 2 cloves garlic, minced, or 1 teaspoon granulated garlic or garlic powder
  • 1 (15-ounce) can Great Northern beans, rinsed and drained
  • One (15-ounce) can pinto beans, rinsed and drained
  • 1 (14.5-ounce) can stewed tomatoes
  • One (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 1/2 cups frozen corn kernels, thawed
  • One heaping tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • One 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 bay leaf
  • Sour cream, or cheese, for garnish, optional
  • Chopped fresh cilantro, for garnish, optional

#7 Crockpot Chicken and Gravy

Three simple ingredients can make for one wholesome meal. Plainchicken.com has a great recipe that you’ll really enjoy. Here’s the ingredients to make it:

  • 3 to 4 boneless skinless chicken breasts
  • 1 (10.75-oz) can cream of chicken soup
  • 2 (0.87-oz) envelopes of chicken gravy mix
  • 1/2 cup water or chicken broth, optional
  • hot steamed rice

#8 Crock Pot Lemon Garlic Butter Chicken Thighs

Number eight in my list of crockpot chicken recipes includes lemon garlic butter chicken thighs. Man, if that doesn’t sound good then I don’t know what does! Here’s the ingredients for that:

  • 6-8 boneless chicken thighs, skinless or with skin
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red chili pepper flakes, or Cayenne (optional)
  • 1/2 teaspoon paprika
  • garlic cloves, sliced or minced
  • 1 teaspoon Italian seasoning
  • 1/2 stick butter, diced
  • Zest of half a lemon
  • Juice of one lemon for this crockpot chicken recipe
  • 1/3 cup low sodium chicken broth
  • Chopped fresh parsley and lemon slices, for garnish

#9 Crock Pot Chicken & Sweet Potatoes

I get that not everyone’s into sweet potatoes, but I sure am. They taste good, work with dinner and dessert, and have a lot of nutritional value. Combine that with some protein and b vitamins and you got yourself a great meal!

  • 1 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground ginger
  • 3 sweet potatoes peeled and cubed
  • 1 onion chopped
  • 1 cup peach preserves OR apricot preserves
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1/2 cup chicken broth or water
  • 2 tablespoons cornstarch
